Green gram or mung beans (Vigna radiata) is a different legume from ordinary soy. It is easy to digest than other legumes. High content in proteins (35g/100g) and fibre (22g/100g). Rich in B-group vitamins and particularly in folic acid (B9). Rich in minerals as iron, phosphorus, potassium, copper, calcium, selenium and mostly magnesium.

Soak for a few hours. Change water and boil. Let it boil on a high flame for 2 minutes after let them boil on a slow flame for 45 minutes aprox. Adding cold water from time to time. Remove from fire before the peel is open. It could be also used to germinate.
Keep in a cool and dry place.
